Pumpkin + Chocolate

I could hear it whisper from the cabinet, eat me!!! Yes, this is what happens when you’re trapped in your house during an ice/snow storm


So the Scharfeen Berger chocolate became chocolate chip pumpkin cookies! Prefect for snow days. One problem. They are almost gone, and I’m still stuck…

Ingredients:
2 cups flour
1 cup quick or old fashioned oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup butter or margarine
1 cup firmly packed brown sugar
1 cup granulated sugar
1 egg slightly beaten
1 teaspoon vanilla extract
1 cup Libby’s pumpkin
1 cup semi-sweet chocolate chips

Directions:
– Pre-heat oven 350
– combine flour, oats, baking soda, cinnamon, & salt together
– cream butter
– gradually add sugars
– add egg & vanilla
– mix in pumpkin
– add dry ingredients in small batches mixing well
– stir in chocolate
– drop 1/4 inch cookie dough on sheets
– bake 20-25 minutes
